Roasted Pork Riblets with Cheesy Duchesse Potatoes

1 slab baby back ribs or pork side ribs,
2 tbsp. olive oil,
50 ml. red wine,
1 tbsp. chopped onion,
1 garlic clove, crushed,
1 tbsp. soy sauce,
1 pinch 7-spice seasoning,
salt and pepper to taste,
For potato: 2 large potatoes,
1 egg yolk,
1 pinch garlic powder,
1/2 tsp. Italian seasoning mix,
a touch of cream,
2 oz. mozzarella cheese.
Tip: Can be served with polenta instead of potato.
Heat the oil in a pan and sauté the garlic and onion; slice the ribs to single riblets and add them to the pan. When the riblets are seared add the wine, soy sauce, 7-spice seasoning, salt and pepper to taste (keep in mind that the soy sauce is salty). Transfer in a small roasting pan, add little water, cover and bake until the meat falls easily off the bone
