Roasted Potato and Broccoli Salad
Great and simple side dish for the fall. Good source of vitamin C and fiber.

2 tablespoons olive oil
1 lemon, zest and juice
1 teaspoon salt
½ teaspoon pepper
2 large cloves of garlic, minced
1 teaspoon fresh thyme, chopped
1lb small yellow potatoes, quartered
1 head of broccoli, cut into florets
6 dates, sliced
2 ounces goat cheese, crumbled
1 tablespoon fresh parsley (optional)

Preheat oven to 400 degrees
In a medium bowl mix olive oil, lemon, salt, pepper, garlic and herbs.
Add potatoes to bowl and coat with the oil mixture.
Place quartered potatoes on prepared sheet pan.
