Roasting your vegetables first, adds a light smokey taste to this Roasted Salsa. Wonderful on burritos, tacos or served with chips.

3 tomatoes (about 1 1/2 pounds), quartered and cored
1/2 cup onion, chopped
5 garlic cloves, peeled
1 fresh jalapeno, stemmed, halved, and seeded
2 to 3 tablespoons vegetable oil
1 cup fresh cilantro, chopped
1/3 cup fresh lime juice
1/2 teaspoon granulated sugar
1 teaspoon salt
