Rocket Prosciutto Cups- they just sound amazing right?!?! If you are wondering what the heck I mean by “rocket”, well its just another name for arugula. Slices of prosciutto are baked until crisp, filled with baby arugula, diced tomato and fresh mozzarella. Drizzled with a bit of olive oil, a squeeze of lemon juice and some fresh cracked pepper. Beautiful, fresh and delicious; this one is a winner!!!
