Plantains are in the same family as bananas, are larger than bananas and regarded as vegetables rather than fruits. They are a great source of dietary starch, rich in dietary fibre, Vitamins A & B6. Plantains also contain moderate levels of folates and potassium. This plantain recipe is simple to make and you can serve as starter, snack or canapés (finger food) or as a side.
