Rosemary roast chicken with easy gravy

This rosemary roast chicken makes it's own gravy as it roasts.

1 5-6lb chicken
2 carrots, chopped into large pieces
1 parnsip, chopped into large pieces
2 whole garlic cloves, peeled
1 whole onion, quartered
1 1/2 cups of chicken stock
