Ruby Red Tart with a Sweet Rosemary Crust

I've said it before, and I'll say it again. I. Do. Not. Bake. I'm such an amateur (at best) with the baked goods. I don't know measurements by heart. I don't have the patience to wait for things to rise, firm, chill, etc. I love being able to throw ingredients together on a stove or grill, and then eat them 20-30 minutes later. Dough

1 egg yolk
2 tbsp very cold water
1 tsp vanilla extract
1 1/4 cups of all-purpose flour
1/3 cup sugar
1/4 tsp salt
8 tbsp (1 stick) of cold unsalted butter
1 tbsp fresh chopped rosemary

Filling

1/2 cup of grapefruit juice
3 large eggs
2/3 cup of sugar
1/4 tsp sea salt
6 tbsp butter
20-25 slices of ruby red grapefruit
