Russian Fried Potatoes

This is an old family way of frying potatoes. Carrots and onions add an amazing flavor to this beautiful dish.
3 large potatoes
1 medium carrot (sliced)
1/2 cup white onion, chopped
1/2 tsp Mrs. Dash
1/2 tsp paprika
2-3 tbsp oil
salt to taste

1. Slice the carrot into circle and chop the onion and set aside in a bowl.
2. Peel the potatoes and rinse
3. Cut potatoes in half and slice each half into thin slices
4. Add the oil to a skillet and heat on high.
5. Once oil is heated, add the potatoes and set heat to medium. Fry potatoes with closed lid and mix every 3-5 minutes.
6. Once the potatoes are almost cooked through, add the sliced carrots and chopped onion.
7. Allow the carrots and onions to cook through, about 5-7 minutes.
8. Add salt to taste, Mrs, Dash and paprika. Mix and ....
9. Enjoy!!!
