This beef barley soup is rustic and earthy with the great flavors of seasoned beef, a great mix of vegetables, nutty tasting barley, and fresh herbs. As this soup simmers it reminds me of lunch at a log cabin restaurant that I went to once. The flavors of this beef barley soup simmer together to bring you one rustic soup experience!

1 1/2 pounds beef stew meat-quartered
2 Tablespoons canola oil-divided
2 teaspoons fresh ground black pepper-divided
1 teaspoon steak seasoning
1 green pepper-chopped
1 1/2 cups carrots-chopped in big chunks
1/2 cup celery-chopped in big chunks
2 parsnips-chopped
1 onion-chopped
2 roma tomatoes-chopped
42 ounces beef broth
1 cup water
3/4 cup barley
fresh herbs: rosemary, oregano, tarragon, thyme-you choose which you like best! I used rosemary and oregano and finely chopped it!
salt for taste- optional
