Rutabaga, bacon and date stuffing

This tasty stuffing has a lovely mix of sweet and savory flavors, juicy and rich, a perfect accompaniment to a festive dinner.

A little oil, approx 1 tsp
9oz/255g (streaky) bacon
1 onion
1 clove garlic
10oz/300g/3 cups grated rutabaga/swede
4 tbsp chopped fresh parsely
1 tbsp chopped fresh sage
1/2 tbsp chopped fresh thyme
1 cup breadcrumbs
3 1/2oz/100g dates, pitted weight, roughly chopped (medjool best)
1 egg, beaten
2 tbsp maple syrup
