Salisbury Steak with Mushroom Gravy

This recipe reminds me of my dad. He was a real meat and potatoes guy and always love a good hamburger steak. In fact, I did get to make this for him one time and he had no idea it was ground turkey mixed with ground beef! I fooled him! This is a great adaptation for you if you, too, like meat and potatoes but need it to be skinnier and healthier without sacrificing flavor. Serve with garlic mashed potatoes (you can find the recipe here) and the meat and potatoes crowd will sing your praise

1 1/2 t. extra virgin olive oil
1 medium yellow onion, diced
1 1/3 lb. ground turkey (93% lean)
1 lb. ground beef (I used 96% lean)
1/2 c. dry breadcrumbs
1 large egg
1 large egg white
2 c. beef broth, divided
1/4 t. salt
1/8 t. black pepper
8 oz. sliced mushrooms
2 T. all purpose flour
2 T. tomato paste
1 t. red wine vinegar
2 t. worcestershire sauce
1/2 t. mustard powder
1/4 c. water
2 T. chopped parsley for garnish (optional)
