This new spin on Eggs Benedict is the perfect solution for using up those abundantly ripe cherry tomatoes & fresh basil from this summer!

1 cup cherry tomatoes
1 tbsp olive oil
2 egg yolks
2 tsp lemon juice
1/4 tsp sriracha
5 tbsp unsalted butter, melted
4 small filets of salmon
2 english muffins
4 eggs
