The mother of my high school sweetheart gave me this recipe. Growing up on the East Coast, I had eaten plenty of fish & chips but never tasted a salmon pattie before moving to Oklahoma. I remember eating these at her home, always with macaroni and cheese as a side dish. So when I made these, of course I had to have mac & cheese as well. The self-rising cornmeal is crucial, trust me on this!

1 large can pink salmon lightly drained
1 cup self rising cornmeal
2 small eggs slightly beaten
1/2 cup onion chopped
salt & pepper to taste
vegetable oil for frying
Heat approx 1/2 inch of oil in skillet over medium to high heat. Mix salmon, 1 cup self rising cornmeal, beaten eggs and onion in a bowl. Shape into 3-4" round patties, about 3/4" thick. May need to add...
