I have a confession to make. I love potato chips! I especially love the salt and pepper chips or the jalapeño. YUM! What I don’t love is the price of one teeny tiny bag that doesn’t last for more than 10 minutes in my house. So I started making my own, and now I can have chips whenever I want. Not really sure if that’s a good thing or not. I love to make up a big batch of these to pair with burgers, brats, or anything on the grill. They are an easy simple side but oh so yummy!
4 medium potatoes
1 c vegetable oil or shortening
Salt and pepper to taste

Wash and dry potatoes. Slice them as thin as possible.
Heat shortening in a deep pot over medium high heat.
Add potatoes in small batches. Cook about a minute per side.
