Shortbread cookies dipped in melted chocolate and sprinkled with dessert salts.

1 cup salted butter, softened
3/4 cup powdered sugar
1 tsp vanilla extract
2 1/2 cups all purpose flour
1 cup semisweet chocolate chips
3 tablespoons salted butter
