Salted Honey Caramel Bars

Rich caramel, almond, cashew and pecan toping over a buttery crust – these delicious bars are the perfect go-to treats whenever the sweet cravings strike. Wrap them individually in parchment paper and store in the fridge.

Crust
1¾ cups all-purpose flour
1 teaspoon vanilla extract
1 tablespoon honey
2/3 cup unsalted butter, chilled and cut into small pieces

Caramel Nut Topping
1/4 cup honey
3 tablespoons butter (or use nut butter, such as almond or cashew)
2/3 cup light brown sugar
¼ – ½ teaspoon sea salt (to taste)
1/3 cup heavy cream
1 teaspoon vanilla extract
2 -2 ½ cups mixed nuts (such as pecans, cashews, almonds or walnuts), lightly toasted
