"Salty Dog" Grapefruit Salad Dressing

This light and refreshing salad dressing was born when I was left with TONS of grapefruit after a trip to Southern California. It is an adaptation of the Salty Dog Cocktail! It goes well with any greens, my family likes it with arugula topped with parmesan cheese or with mixed greens topped with tomato and avocado. It also makes a great marinade...the possibilities are endless!

the juice from 3 grapefruit (approx 2 cups)
1 tsp of salt
1/2 of a large shallot finely chopped
2 tsp of white wine vinegar
2 tsp Dijon mustard
3/4 cup of olive oil

In a bowl or jar whisk all ingredients together...Enjoy!
