Sausage, Egg, and Cheese Burritos

Some folks call these “breakfast burritos,” but I don’t usually get my act together in the morning to make eggs and sausage. It has to be a really special occasion! Instead, I make egg dishes like this for dinner during the week. These Sausage, Egg, and Cheese Burritos are easy to pull together and they taste delicious. We served ours with chips and salsa, but you could also take a more “breakfast-y” route and serve yours with some fresh fruit. At any time of day, they are perfectly tasty!

•8 ounces bulk pork breakfast sausage
•8 large eggs
•3 tablespoons milk
•1 cup shredded cheddar cheese
•½ cup salsa
•4-6 large flour tortillas
