The perfect pretzel roll for all kinds of sausage.

1/2 cup plus 3 tablespoons warm water (110-115 degrees)
1 tablespoon brown sugar
1 tablespoon honey
2 1/4 teaspoons active dry yeast (1 package)
2 tablespoons half and half
3 tablespoons extra virgin olive oil (plus additional for oiling the bowl)
1 teaspoon salt
3 - 3 1/2 cups flour (more or less depending on the humidity in your particular area)
2 quarts water
3 tablespoons baking soda
1 egg yolk mixed with 1 tablespoon water
poppy seeds (optional)
sesame seeds (optional)
dehydrated minced onion (optional)
1 tablespoon brown sugar
1 tablespoon honey
