A quick vegetable dish of sauteed baby zucchini with toasted lemony breadcrumbs

1/4 cup fresh bread crumbs
1 tbsp. light butter
1/4 cup minced onion
1 lb baby zucchini
Zest of lemon
1/2 tsp. kosher salt
1/4 cup water
