Savory Chicken & Pear Pastilla

A “Pastilla” is a traditional Moroccan dish (sometimes called “Bastilla” in Spain) and basically involves some sort of savory, spiced meat stuffing baked inside layers of Fillo dough. This delicious version uses pear and chicken.

1/2 teaspoon ground cumin
1 tablespoon cinnamon
1 tablespoon grated fresh ginger
1 teaspoon ground allspice
4 tablespoons vegetable oil
2 chicken leg quarters
1/4 teaspoon each salt and black pepper
3 cups diced pears (about 2 pears)
1 large onion, chopped (1 pound)
3 cups chicken stock or broth
1/2 cup heavy cream
3 large eggs
1 large egg yolk
Melted butter for brushing phyllo (Fillo) dough
