5 c. Granny Smith apples, peeled and chopped
2 c. water
3/4 c. sugar, plus 2-3 Tbsp
3/4 c. brown sugar
1/4 c. cornstarch
1 Tbsp lemon juice
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 egg white
