CAKES
2 - 1 pound bags of frozen cauliflower florets
1 cup gluten-free bread crumbs
½ cup finely grated Parmesan cheese
2 eggs
1 cloves garlic, minced
1 teaspoon Italian seasoning
¼ teaspoon pepper
DRESSING
¾ cup olive oil
¼ cup freshly squeezed lemon juice
2 teaspoons Dijon mustard
2 teaspoons maple syrup
¼ teaspoon salt

1 pound Brussels sprouts, tough stem ends trimmed
½ pound applewood smoked bacon, cooked and chopped
2½ ounces (heaping ½ cup) walnut halves, toasted
¼ cup capers, drained
¼ cup shaved Parmesan cheese
2 - 1 pound bags of frozen cauliflower florets

Preheat oven to 425 degrees.
Place the cauliflower, along with 2 Tablespoons of water, in a ceramic or glass casserole dish and cook in the microwave, on high, for 17 minutes. Let sit for 10 minutes.
