Shortbread Cookies with Strawberry Frosting

Perfectly buttery shortbread cookies with a dollop of fluffy strawberry frosting--a delightful summer treat!

1 cup butter at room temperature
1 1/2 cup powdered sugar
3 cup flour
1 cup butter, at room temperature
1/2 cup strawberries
4 cups powdered sugar
10-12 strawberries, sliced, if desired
Preheat oven to 350° F. Using the paddle attachment of a stand mixer, mix 1 cup of butter, 1 1/2 cups powdered sugar, and the flour on low speed until well combined. Roll into 1 inch balls and place on cookie sheet lined with parchment paper. Bake for 12 minutes. Let cookies cool completely. Meanwhile, using the paddle attachment of a stand mixer beat the other 1 cup of butter until fluffy. Add powdered sugar and beat on low speed until incorporated. Using a food processor (a Magic Bullet works great too), puree the strawberries. Pour pureed strawberries into frosting and beat on high speed for 4-5 minutes. Frost each cookie with a dollop of frosting and top with a sliced strawberry.
