Shrimp and Sweet Potato Quesadillas

Quesadillas are one of my kids' favorite meals. The addition of shrimp and mashed sweet potato keeps this dish interesting and makes it even healthier. If you have mashed sweet potatoes on hand, it's a great way to use up left-overs. A can of sweet potato or pumpkin puree also works great!

•8 flour tortillas
•½ cup sweet potato puree (you can use canned sweet potato puree, left-over mashed sweet potatoes, or even canned pumpkin puree)
•2 c. grated cheddar cheese
•½ lb. cooked shrimp, peeled, deveined, and chopped
•Salsa and guacamole for serving

2 Cucumbers
1 lemon juice and zest
2 tablespoons fresh mint

Peel the cucumbers and chop them into large pieces. Put these cucumbers, lemon juice, lemon zest, and mint in a blender. Blend for about 3 minutes or until the juice is smooth.
