Shrimp Bisque

Rich and delicious - you'll be surprised at how little time this bisque takes!

1 pound shrimp, peeled, cleaned and deveined (shells and/or tails reserved)
4 cups chicken stock
3 tablespoons olive oil
3/4 cup chopped green onions (both green and white parts)
1 tablespoon minced garlic
pinch of cayenne pepper
1/2 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground pepper
