Simple Country Potato Soup

Thank goodness for a cold day and a lack of pantry supplies! This is the easiest Potato Soup I've ever made. It's simple and delicious, light and creamy.

4 large yellow potatoes
3 slices bacon (I prefer turkey bacon)
2 large carrots, peeled and diced
1 small onion, diced
1 tsp. olive oil
1 can cream of chicken soup
3 cups milk
1 tsp. celery salt
salt and pepper (to taste)
Peel and slice the potatoes. Place them in water and boil until soft (about 10 minutes). While the potatoes are boiling, place the bacon, carrots and onion in a small frying pan with the olive oil. (I use turkey bacon and the oil helps make it crisp - with regular bacon you might not need the oil at all) Let these caramelize (this is my favorite part - it makes your house smell delicious!) Once the potatoes are cooked, drain off most of your water, leaving about a half inch worth in your pot. Then, with a fork, slightly mash the potatoes. Then, add your milk. Once the milk is warm, add your can of soup and seasonings. Let this simmer on the stove for about 10 minutes and enjoy!
