Simple Homemade Pico De Gallo

Quick and Easy Pico De Gallo with fresh tomatoes, shallot, jalapeno, lime juice, cilantro, and salt. Perfect as an appetizer or topping for your frittata.

1 small shallot, finely chopped
Juice from 1 lime
1 jalapeno, finely chopped
1/4 cup chopped cilantro
1 c. chopped tomato (I used 10 mini marzano/plum tomatoes)
1/2 tsp. salt
Soak shallot in lime juice for approximately 10 minutes before adding other ingredients. Drain tomatoes in a small sieve or collander. Add all ingredients to shallot/lime juice mixture and gently stir.
