Simply Perfect Roast Chicken

Nothing says "fall is here" like football on TV and a chicken roasting in the oven, well, except maybe an apple pie in the oven too, but that will come later this month. Today was finally the first cool day of September and I couldn't wait to get a good old fashioned Sunday dinner on the table. Roasting a chicken seems to intimidate people and I never understood why. Roasting a chicken is simple and here is how I made mine today:

1 Orange - cut into chunks *
2 T butter - softened *
2 cloves garlic - rough chopped * Thyme - chop about 2 tsp for seasoning the outside of the bird and reserve a few sprigs for seasoning the cavity of the bird *
1/2 tsp salt
1/2 tsp black pepper
You have got to season under the skin and inside the cavity if you want a moist delicious bird. I promise once you do this once it won't seem so gross. Lift the skin, use a paring knife if skin doesn't...
