Slow Cooker BBQ Apricot Pulled Pork Sandwich

I don’t handle the heat very well, so I try to avoid cooking over a hot stove at all costs. This recipe is so delicious and requires very little effort, which is perfect for summertime!

1 cup barbecue sauce
1 1/2 cups apricot preserves
1 envelope dry onion soup mix
2 Tablespoons dijon mustard
2 Tablespoons soy sauce
3 pound boneless pork shoulder roast

This crispy fried chicken sandwich recipe is better than Chik-Fil-A, Popeye's or McDonald's! The chicken breast is brined in pickle juice, breaded with flavorful seasonings, fried until golden brown, and then piled on a toasted brioche bun with lettuce, tomato, pickles and mayonnaise. Serve the sandwich with a side of waffle fries and homemade Chik-Fil-A sauce for dipping!

4 chicken cutlets
1/2 c milk
1/2 c dill pickle juice
2 c all purpose flour
2 T confectioners sugar
2 t baking powder
2 t paprika
2 t kosher salt
1/2 t black pepper
1/2 t garlic powder
1/4 t onion powder
1 egg
