Slow Cooker Cilantro Lime Chicken Enchilada Soup

1 onion, finely chopped
6 cloves garlic, minced
4 chicken breasts, cut into 2 inch pieces
2 canned chipotle chilies in adobo sauce, finely chopped, plus 2 tablespoons of adobo sauce
6 cups chicken broth
1/2 cup chopped fresh cilantro
Juice of 2 limes
Salt and pepper
Avocado
Tortilla chips
In a large slow cooker, add onion, garlic, chicken, chipotle chilies plus the sauce, chicken broth, cilantro, and lime juice. Salt and pepper to taste. Cook on low for 5-6 hours or high for 3-4 hours.
