Slow cooker Lentil Spaghetti

Easy and healthy! My kids devoured this and if they noticed it was different than the "normal" spaghetti with meat sauce, they never said anything and certainly didn't complain. My 4 year old had four helpings!

1 small onion, chopped
1/2 cup chopped carrots
15 oz can petite diced tomatoes, undrained
2 cans tomato sauce (8 oz each)
6 oz tomato paste
1/2 cup water
3/4 cup lentils, rinsed and drained
2 garlic cloves, minced
1/2 tsp dried oregano
1/2 tsp garlic powder
1 tsp dried basil
1/4 tsp crushed red pepper (optional)
Salt and pepper to taste
1/4 cup parmesan cheese+ more for serving
16 oz spaghetti
Add all ingredients, except spaghetti and parmesan, to crock pot and mix. Cook on Low 6-8 hours or High 3-4 hours. Cook spaghetti according to package directions. Before serving, add 1/4 cup parmesan and mix well. Serve over spaghetti noodles and top with additional parmesan cheese, if desired.
