Slow cooker Mushroom Rissotto

Really tasty and easy risotto made in your crockpot

1 1/2 cups Arborio rice
3 14ounce cans chicken broth
3 tablespoons butter
1 1/2 cups sliced mushrooms of your choice
1 cup finely diced celery
1/4 teaspoon thyme leaves
1 small onion diced fine
1/2 cup dry white wine
1/2 cup grated parmesan cheese
In skillet melt butter and add onion, celery, mushrooms. cook until tender ,add rice and cook about 1 minute add wine and cook another minute until wine is absorbed. place in crockpot and add the chicken broth. cook on low for about 2 hours if too dry add a little warm broth before serving stir in parmesan cheese and enjoy.
