8 boneless ( skinless chicken thighs )
Salt and pepper ( to taste )
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup honey
3 teaspoons minced garlic
1 teaspoon ginger ( minced )
2 Tablespoons sriracha
1 teaspoon lime juice
4 cups cooked rice ( for serving )
Cilantro ( for garnish )
