Tender, slow cooked chicken in a sweet and savory sauce.

1.5 pounds boneless, skinless chicken breasts
1/3 cup soy sauce
1/3 cup white wine vinegar
3/4 cups chicken broth
1/2 cup blackberry jam, divided
2 cloves garlic, minced
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1/2 teaspoon pepper
1 tablespoon brown sugar
1 tablespoon cornstarch + 1 tablespoon water
