Avocado toast with a healthy crave worthy upgrade! Smashed beets and gluten free crumbed fried avocado toast with onion aioli. Crispy and buttery breakfast made in less that 20 minutes.

1/3 - 1/2c almond flour
1/4 cup coconut flour
1 egg
butter or coconut oil (1 tbsp)
1 avocado (underripe works best)
mashed cooked beets ( about 3/4c) - See notes for quick option
3 to 4 pieces of gluten free toast
sea salt/pepper to taste

For the ONION AIOLI
1 shallot or 1/4 cup sweet onion chopped
1/3 cup cold olive oil
1 egg yolk (room temp) - See directions for raw egg substitute.
1/4 tsp sea salt
1/2 tbsp dijion mustard
1/2 tsp garlic powder
1 tsp white vinegar or lemon juice
1/2 tbsp cold water
