Smothered Sweet Pork Burritos

Slow cooker shredded pork layered with cheese and cilantro black bean rice--tossed in a tortilla and smothered with green enchiladas sauce and cheese! AMAZING!

2 1/2 pounds pork roast (shoulder or butt)
Salt and pepper
1 Tbsp oil
1-2 tsp liquid smoke
1/2 cup water
1/2 cup packed brown sugar
2 (15-ounce) cans green enchilada sauce
1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
1 (15-ounce) can black beans, rinsed and drained
1/2 cup chopped cilantro
8 ounces Monterey Jack or mozzarella cheese
6-8 large tortillas
For Cilantro Lime Rice
1/2 Tbsp butter
1 cup long-grain white rice
2 cups low-sodium chicken broth
3/4 tsp salt
1/4 tsp freshly ground black pepper
juice and zest of 1 lime
2 Tbsp chopped cilantro
1/4 tsp cumin
