Soft Lemonade Sugar Cookie

These cookies are soft and fluffy, rolled in sugar and delightfully citrusy thanks to the frozen lemonade concentrate … and they are the perfect addition to the citrus baking series I’ve concocted

1 cup butter, softened
1 cup granulated sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
2/3 cup frozen lemonade concentrate, thawed & divided
additional granulated sugar to roll the cookies in
