These cookies are hearty, soft, and just the right amount of sweet. They adapt well to just about any add in, but my favorites are any combination of white chocolate chips, dried cranberries, and shredded coconut.

2/3 cup butter OR coconut oil, softened (They’re great both ways, really!)
2/3 cup brown sugar
2 eggs
1 1/2 cups old-fashioned oats
1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt (omit if using salted butter)
Whatever mix-ins you want

Preheat oven to 350 degrees. Cream butter or coconut oil and sugar together until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in your mix-ins of choice. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until just barely golden brown. This is key to making sure they are soft–do not overcook! Cool on wire rack. Store in a Tupperware container to keep moist!
