Soft Pretzels with Ricotta Cilantro Dip

The pretzels are good, but the dip MAKES them. Soft, warm pretzels with a zippy, creamy dip? Yes please!

1 ½ cups warm water
2 ¼ tsp yeast
1 tsp salt
1 tbsp sugar
4 cups all-purpose flour (You may need a bit more. We've used anywhere from 4 even to 4 ½, seems to depend on humidity)
Salt (sea or plain) and/or rosemary for sprinkling on top
4 oz ricotta cheese
1 tbsp cilantro, finely diced
1 small clove garlic, finely diced
More salt and pepper to taste
Preheat oven to 425 degrees F. Dissolve yeast in water. Stir with a spoon until well mixed (some chunks will still be there). Add salt and sugar, mix well. Add the flour a cup at a time, mixing until dough...
