Sour Cream Sealed Apple Cheesecake

My husband has been dropping HUGE hints for me to make cheesecake lately. Of course I don’t buy anything until it goes on sale, so when the cream cheese and sour cream went on sale at a local grocery store, I decided to treat him (Ok I admit, it was for myself too!) to a cheesecake.

1 graham crumb crust (prepared according to directions on the graham crumb package for basic crust, pressed in a spring form pan

For Cheesecake Filling:

2 oz packages of cream cheese
2 eggs
1/2 cup of sugar
1 tsp vanilla

Sour Cream Seal:
1 cup of sour cream
2 tbsp sugar
1/2 tsp vanilla

Topping:

3 Golden Delicious Apples
1/2 cup of sugar
1/4 cup of water
1/4 cup of butter
1/4 cup of unsweetened apple juice
1 tsp cinnamon
1 1/2 tbsp corn starch, mixed with 2 tablespoons of water
