1 lb Ground Beef
1/2 c Chopped Onion
1 Clove Garlic, minced
1 tbsp All Purpose Flour
1 (8 oz) can Tomato Sauce
1 (7.5 oz) can Tomatoes, diced
1 (4 oz) can green chili peppers rinsed, seeded and chopped
2 tsp Chili powder
6 c torn/shredded lettuce
1 (15 oz) can garbanzo beans, drained
1/2 c pitted black olives, sliced
1 c (4 oz) shredded monterey jack or cheddar cheese
1 c Cherry Tomatoes, halved
1 med green pepper, cut into strips
1 Avocado, peeled, seeded, sliced
Cook meat, onion and garlic till meat is browned and onion is tender; drain. Stir in flour, tomato sauce, undrained tomatoes, chili peppers, and chili powder. Cook and stir till thickened and bubbly. Meanwhile, in a salad bowl combine lettuce, beans, and olives; toss. Top lettuce with meat mixture. Arrange salad on 6 individual plates, sprinkle cheese on top, place a few tomato halves and green pepper strips. Arrange avocado slices around edge of plates.
