Southwest Pasta Bake Recipe

This Southwest Pasta Bake was a huge hit with the kids! It was full of flavor and made enough for 2 meals! You could also double the recipe, bake it, and stick it in the freezer for another day or for a friend!

1 Pound of Ground Turkey
3 cloves of garlic, peeled and minced
½ of an onion
1 box of Penne Pasta (I used whole wheat pasta)
1 (16 oz) Jar of Salsa
1 (8 oz) can of tomato paste
1 (12 oz) can of tomato sauce
2 cups of fresh spinach
1 cup of corn
1 cup of black beans, drained
½ package of taco seasoning
1 cup of Mozzarella Cheese

Preheat the oven to 350 degrees.
Heat a large skillet over medium heat. Add your ground turkey, garlic, and onion and cook until meat is browned and onions are soft.
