Spam Fried Rice

Fried rice using SPAM! It is sooo good, easy to make, and inexpensive. I love that I can use my spam from food storage. It easily comes together from start to finish in 30 minutes. We make it on a regular basis and the kids love it! Since it only uses 1/2 can of spam, I just freeze the other half for the next batch! You can serve it as a side...but we often have it as our main dish. I like it with all of the ingredients, but it is very versatile if you are missing something here or there.

3 cups cooked rice (brown or white) ...day old works great
2-3 T. olive oil
1/2 can Spam (diced small)
2 eggs, beaten
2 stalks green onion, finely minced
2 cups fresh spinach leaves, finely chopped
1 T. dry sherry
2 T. soy sauce
1/4 cup frozen peas
1/2 cup chopped red pepper
1. Heat 1 tsp of cooking oil in small saute pan over medium high heat. Add eggs and gently stir to cook. When eggs are about 80% done (still a little runny), remove from pan and set aside. 2. Turn heat to high. Add a little more cooking oil to a large saute pan (12"). When hot, add diced Spam to the pan. Cook until browned. Add green onions, fry until fragrant. Add spinach, fry until softened. Add remaining oil. Add rice and cooked eggs and toss to incorporate ingredients. 3. Let it sit in the pan for a few minutes to heat up ..add cooking wine and soy sauce and stir again. Season with ground pepper to taste (I don't add salt because of the high salt content of the Spam).
