A Fall inspired cheesecake, rich in spicy cinnamon and honey flavors. The filling is creamy and smooth with a delicious ginger crust.

200g Ginger Biscuits, crumbed finely

100g Butter, melted

2 tubs {250g each} Cream Cheese, plain, softened

1/4 cup Caster Sugar

1/4 cup Honey

1 t Vanilla

2 t Mixed Spice

1/2 cup Fresh Cream {whipping cream/double cream}

2 Eggs, separated

2 t Cinnamon Sugar
