Spiced Pumpkin Maple Butter

This is a great addition to the morning the autumn months.

4 cups pumpkin puree
1/4 cup pure maple syrup
1 cup maple pancake syrup
1/2 cup apple juice
2 tbsp. lemon juice
2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
In a large pot, combine all ingredients. Bring to a boil, reduce heat. Cook over medium heat, stirring frequently, for 25 minutes or until thickened. Remove from heat and let cool. Store in airtight container in freezer and fridge.
