2 tablespoon olive oil
1 cup diced carrots
1 red pepper, finely diced
1/2 cup finely diced yellow onion
1 tablespoon minced garlic
2 pounds ground turkey
2 tablespoons cornstarch
2 tablespoons chili powder
1 tablespoon dried oregano
1/2 tablespoon cumin
1/4 cup brown sugar
2- 28 ounce cans low sodium crushed tomatoes
2- 14 ounce cans low sodium kidney beans
12 ounce can Dr. Pepper
7 ounce can chipotle peppers in adobo sauce, finely diced
