Spicy Apple Muffin

Canada's first apple trees survived a long ocean voyage from Normandy during the 1600's and were planted in Nova Scotia by French settlers.Many of the best apples are from there.So celebrate the great flavour of apples with these delicious apple spice muffins.

1 3/4 cups whole wheat flour
1 Tbsp baking powder
1/4 tsp salt
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 cup dry milk powder
2 eggs
1/2 cup honey
1/2 tsp vanilla
1/2 cup vegetable oil
1 cup grated apple(including peel)
1/4 cup raisins
1/4 cup walnuts chopped
Preheat oven to 400 F Combine dry ingredients(first seven) in a mixing bowl.Beat eggs,add honey,vanilla and oil mixing well. Make a hole in center of dry ingredients and add grated apple,raisins and chopped walnuts.Pour in liquid ingredients.Mix only until all dry ingredients are blended.Do not overmix or muffins will be tough.Fill greased muffins tins 2/3 full. Bake at 400 F for 15-20 mins until lightly browned.Remove fron pan and let cool on a wire rack.Makes about 10 muffins.
