These soft, chewy cookies are a decadent version of a molasses cookie. You won't be able to stop eating them and the batch is large enough to share with friends or exchange at a cookie swap.

1 cup soft butter
2 2/3 cup sugar
3 eggs
1 cup molasses
2 tbsp apple cider vinegar
2 tbsp baking soda
4 tsp ground ginger
1 tsp cinnamon
1 tsp cloves
1 tsp cardamom (can substitute nutmeg if you don't have cardamom)
6 cups flour
¼ – ½ cup granulated sugar, for rolling dough in
2 2/3 cup sugar
3 eggs
1 cup molasses
2 tbsp apple cider vinegar
2 tbsp baking soda
4 tsp ground ginger
1 tsp cinnamon
1 tsp cloves
1 tsp cardamom (can substitute nutmeg if you don't have cardamom)
6 cups flour

Mix the butter and sugar together. Beat them together until they're nice and fluffy.
Add the eggs one at a time, mixing thoroughly after each addition.
Mix in the molasses and the vinegar.
