Here's a quick and easy way to prepare fresh Eggplant.

2 medium eggplant
½ cup half & half cream
½ cup milk
1 ½ cup flour
1 tsp. garlic powder
1 tsp. paprika
1 tsp. ground black pepper
½ tsp. turmeric
¼ tsp. sea salt
¼ cup Parmesan cheese, grated
1 cup Mozzarella cheese, grated
hot sauce (like Tabasco)
Canola oil
olive oil (or olive oil spray)
